Broccoli-rice cakes

Ingredients

4 sprays cooking spray

1 cup broccoli, chopped roasted

1/2 cup brown rice, cooked

1 large egg , lightly beaten

2 Tbsp panko breadcrumbs

1 Tbsp grated parmesan cheese

1 pinch kosher salt

1 pinch black pepper

Directions

In a medium bowl, stir together broccoli, rice, egg, panko, Parmesan, salt, and pepper. Coat a small nonstick skillet with nonstick spray; heat over medium. Divide mixture into 2 equal portions, shaping each into a patty. Cook until browned and firm, 2½ to 3 minutes per side.
